These avocado, goat cheese, and tomato salsa toasts feature a perfect balance of creamy, tangy, and fresh flavors, making each bite delightfully satisfying. They are also quick and easy to prepare, perfect for a nutritious and delicious breakfast or a light, refreshing snack.


– 2 slices of bread
– 1 avocado (about 200g)
– 60g goat cheese
– 2 small tomatoes, finely diced (about 200g)
– ½ small red onion, finely chopped (about 50g)
– 2 tablespoons chopped fresh cilantro (about 6g)
– Juice of 1 lime (about 20ml)
– Salt and pepper, to taste
– 2 tablespoons olive oil (30ml)

1. Toast the slices of bread to your preferred level of crispiness.
2. In a small bowl, mash the avocado and spread it evenly over the toasted bread slices.
3. Crumble the goat cheese and sprinkle it on top of the avocado.
4. In another bowl, mix together the diced tomatoes, chopped red onion, cilantro, lime juice, and a pinch of salt and pepper to create the salsa.
5. Top each toast with the tomato salsa.
6. Drizzle olive oil over each toast.
7. Serve immediately and enjoy!

Kids can help by mashing the avocado, mixing the salsa ingredients, and sprinkling the goat cheese on the toasts.
