I’ve always laughed and cringed about those “when guests arrive unexpectedly” recipes, but this one falls exactly in this category. An extremely easy, super delicious and fancy-tasting cookie recipe.

  • 200 grams (1 2/3 cups) of all-purpose flour
  • 100 grams (1/2 cup) of granulated sugar
  • 120 grams (1/2 cup) of unsalted butter, softened
  • 1 large egg
  • Zest of 2 lemons
  • 2 tablespoons of fresh lemon juice
  • 1/2 teaspoon of baking powder
  • A pinch of salt
  • Powdered sugar for dusting

  • Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
  • In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  • Beat in the egg, lemon zest, and lemon juice.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  • Roll the dough into small balls (about the size of a walnut) and place them on a baking sheet lined with parchment paper.
  • Use a fork to gently press down on each dough ball, creating a hashtag (#) pattern on the top of each cookie.
  • Bake for 10-12 minutes or until the edges are slightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
  • Once cooled, dust the cookies with powdered sugar.

Kids can help by rolling the dough into balls and making the hashtag pattern with the fork.
